Banana and Chocolate Cake

- Preheat the oven at th 6/180°C/350°F .
- Separate the egg white from the yolk.
- In a large bowl, beat the yolks with the sugar.
- Add the cooled down melted butter and mix well.
- Add the flour and yeast, then the vanilla extract, cinnamon and salt.
- Squash the bananas and add the banana puree to the bowl.
- Break up the chocolate in little chip-like pieces, then add to the cake mix.
- In another bowl, beat the egg whites and add them slowly to the mixture, taking care not to break the structure too much.
- Grease a round or rectangular cake tin; ou use a silicone mould. Pour the mixture in the tin.
- Cook it for 40 minutes. In a fan-assisted oven, check the cake after 30 minutes.
- Once cooked, leave it to cool before removing the cake from the tin. Enjoy it along with vanilla ice-cream and a cup of your favourite hot drink.
