Banana and Chocolate Cake

Ingredients

Eggs 2
Sugar 100g or 3 1/2oz
Melted butter 100g or 3 1/2oz
Flour 200g or 7oz
Yeast 2 teaspoons
Salt 1 pinch
Vanilla extract 1 teaspoon
Cinnamon 1 teaspoon
Chocolate milk or dark 50g or 1 3/4oz
Ripe bananas 3

  1. Preheat the oven at th 6/180°C/350°F .
  2. Separate the egg white from the yolk.
  3. In a large bowl, beat the yolks with the sugar.
  4. Add the cooled down melted butter and mix well.
  5. Add the flour and yeast, then the vanilla extract, cinnamon and salt.
  6. Squash the bananas and add the banana puree to the bowl.
  7. Break up the chocolate in little chip-like pieces, then add to the cake mix.
  8. In another bowl, beat the egg whites and add them slowly to the mixture, taking care not to break the structure too much.
  9. Grease a round or rectangular cake tin; ou use a silicone mould. Pour the mixture in the tin.
  10. Cook it for 40 minutes. In a fan-assisted oven, check the cake after 30 minutes.
  11. Once cooked, leave it to cool before removing the cake from the tin. Enjoy it along with vanilla ice-cream and a cup of your favourite hot drink.
